The best homemade drop biscuits.

Biscuits might be my favorite breakfast item. Okay, no they for SURE are my favorite breakfast item. Especially homemade drop biscuits.

But, we took regular (delicious) homemade drop biscuits up a notch and added cheese and sausage to the mix! Because, yum.

This delicious addition of Tennessee Pride mild country sausage and cheddar cheese makes these stuffed biscuits a whole meal in one bite. You won’t be able to just eat one.

Ingredients for sausage and cheese homemade drop biscuits.

  • Tennessee Pride Mild Country Sausage. This high quality fresh pork made with the Odom’s family secret spice blend recipe creates a delicious real country flavor that is sure to be a crowd pleaser in any recipe. Plus, it’s usually a great price!
  • Cheddar Cheese. We are big fans of buying the block of cheese and shredding it ourselves. Pre-shedded cheese weirds me out a bit and shredding yourself takes no time. Make sure you have a solid grater though.
  • All Purpose Flour. I can’t speak to how other flours would work with this recipe because we haven’t tested it but I know the 1:1 gluten free flours usually adapt pretty well.
  • Frozen Butter. Since these drop biscuits aren’t made with shortening, you need a high fat butter NOT margarine. You’ll want it to be super cold so when you add it into the dough it doesn’t make your biscuits spread in the oven.

How to make stuffed sausage and cheese homemade drop biscuits.

These biscuits are so easy and would be a great recipe to get your kiddos in the kitchen. O loves to be VERY helpful so she can help with the mixing in this recipe.

  • Set out all your ingredients and preheat the oven to 425 degrees F. Mise en place is so important for any recipe so you don’t have a “oh shoot, forgot to grate the cheese!”
  • First, cook the sausage because it needs to cool before adding to the drop biscuit mix. Cook in a cast iron pan, breaking up with a wooden spatula. We recommend cooking on medium-high to get some crunchy bits in the drop biscuits. Drain your sausage and then pop in the freezer while you prep the rest of the biscuits.
  • Cut, cube, and freeze your butter for about 15 minutes. You can also use a cheese grater and grate a frozen stick of butter into the dough. The most important thing is that the butter is VERY cold.
  • Why not also toss your grated cheese into the freezer? It’s necessary to have cold ingredients so the biscuits stay together while baking.
  • Add all your dry ingredients to a bowl and whisk to combine. Then, add your shredded cheese, sausage, and cubed butter. Use your hands (get messy!) to combine the mixture into about pea sizes crumbles.
  • Then, add your milk and and mix together until fully combined.
  • Grab your parchment or silicone lined baking sheet and using a cookie scoop – drop biscuit batter onto the baking sheet.
  • Toss into the oven and bake for 15-20 minutes, until your desired crispiness. Joel really likes his biscuits a little “crunchier” but if you want them a little softer, cook closer to the 15 minute mark.

Where to find Tennessee Pride sausage.

You can find Odom’s Tennessee Pride Country Sausage at your local Walmart! You can head into the grocery store and find it in the refrigerated meat section near the bacon.

Other uses for Tennessee Pride sausage.

You will have a little bit of sausage left over from this recipe and luckily there are TONS of ways to use this tasty product. You can use it for other breakfast dishes, lunches, dinners in more traditional or unique ways. Here are a few of our favorite ideas.

Ingredients

  • 1/2 cup butter COLD and cubed
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup whole milk
  • 3/4 cup Odom's Tennessee Pride Mild Country Sausage cooked and cooled
  • 1/2 cup cheddar cheeses shredded

Instructions

  • Preheat your oven to 425 degrees F. Line baking sheet with parchment or silicone baking sheet. Set aside.
  • Dice your butter into small cubes and place in a small bowl then place in the freezer.
  • Add entire Odom's Tennessee Pride Mild Country Sausage package to a warm cast iron skillet. Using a wooden spatula, break up into crumbles and cook until desired doneness, about 10 minutes. Pour cooked sausage into a bowl and place in the freezer to cool down.
  • Add all your dry ingredients (flour, baking powder, salt) to a bowl and whisk to combine.
  • Then, add your shredded cheese, cooled sausage, and cold cubed butter. Use your hands (get messy!) to combine the mixture into about pea sizes crumbles.
