What is better than homemade chicken salad? Homemade chicken salad on a soft croissant! This super easy recipe has a secret ingredient that makes it extra delicious. Plus, it's filled with freshly toasted pecans. YUM!
Preheat oven to 425 degrees F. Place pecans on baking sheet and cook for 10-12 minutes until fragrant.
While the pecans are cooking, prepare the rest of the chicken salad. Pull the meat from the chilled rotisserie chicken and shred, remove any skin or fat. Place in a mixing bowl.
Add grapes, mayo, salt, pepper, and honey and mix to combine.
Once the pecans are toasted, let cool for a minute or two then add to chicken salad mixture. Combine until very well mixed.
Add a scoop to a croissant or bread and enjoy!
