Ingredients

  • 1 Rotisserie Chicken (about 4-5 cups) cooled + shredded
  • 1 cup toasted chopped pecans
  • 2 cups green grapes sliced in half
  • 1 cup mayo
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 Tablespoons honey
  • 6-8 croissants or slices of bread

Instructions

  • Preheat oven to 425 degrees F. Place pecans on baking sheet and cook for 10-12 minutes until fragrant.
  • While the pecans are cooking, prepare the rest of the chicken salad. Pull the meat from the chilled rotisserie chicken and shred, remove any skin or fat. Place in a mixing bowl.
  • Add grapes, mayo, salt, pepper, and honey and mix to combine.
  • Once the pecans are toasted, let cool for a minute or two then add to chicken salad mixture. Combine until very well mixed.
  • Add a scoop to a croissant or bread and enjoy!

Notes

Chicken salad will stay fresh up to 3 days in a sealed container in the fridge.
