These pot roast sliders are the absolute best! They are made in the crock pot and served on Sister Schubert’sⓇ Parker House Style Yeast Rolls.

Ingredients

  • 1-2 Tablespoons olive oil
  • 2-2.5 lb chuck roast
  • 1 cup yellow onion thickly sliced
  • 4 cups potatoes chopped
  • 3 cups carrots chopped
  • 1 Tablespoon thyme
  • 2 teaspoons garlic powder
  • 1 2/2 cups beef broth
  • salt and pepper to taste
  • 2 packages  Sister Schubert’s Parker House Style Yeast Rolls
  • 1/2 cup crispy onions optional
  • 3-5 slices swiss cheese optional
  • handful of jalapenos optional

Instructions

  • Add olive oil to a cast iron (or other heavy duty pan) pan and heat over medium-high heat.
  • While the oil/pan are heating up, pat your chuck roast dry with paper towels on both sides. Then, season heavily with salt and pepper on both sides.
  • Add seasoned chuck roast to warm pan and sear on all sides until browned all over, about 4-6 minutes on each side. Then, transfer to your slow cooker.
  • Adding a little more olive oil to the pan, add your sliced onions and cook them for 3-4 minutes until a little bit soft and fragrant. Pour the onions and oil over the chuck roast in the slow cooker.
  • Then, add the beef broth, thyme, and garlic powder to the slow cooker.
  • Gently layer that potatoes and carrots on the chuck roast and onions in the slow cooker. Season with salt and pepper to your preference.
  • Cover slow cooker and cook on low heat until the roast and veggies are tender, about 7-8 hours.
  • About 30 minutes before roast is done, cook the Sister Schubert’s Parker House Style Yeast Rolls according to package instructions.
  • Once cooked, remove roast and place in a bowl or on a plate and shred with two forks until fully shreded. Place shredded roast in a bowl and ladle about 3/4 of cup of the broth over the shredded roast. Cover with foil and let sit while you prepare the Sister Schubert’s Parker House Style Yeast Rolls.
  • Once rolls are done, slice each on in half and spoon some shredded roast in the middle. If desired, top with small slices of swiss cheese. You can melt the cheese by placing the rolls with roast + cheese open faced on a baking sheet under the broiler for a minute or two.
  • If desired, you can also top with crispy onions and jalapenos! Serve with the cooked potatoes and carrots on the side and enjoy.
