Bunny Fruit Salad

This is part recipe, part fun activity with your kiddo! Use bunny shaped cookie cutters to make a delicious and adorable fruit salad for spring or summer.

Ingredients

Fruit Salad

  • 1 Whole Pineapple
  • 1 Pint Strawberries
  • 1 Cantaloupe
  • 3 Champagne Mangoes

Whipped Cream

  • 1 Pint Heavy Whipping Cream
  • 4 Tablespoons Sugar
  • 2 teaspoons Vanilla

Instructions

Fruit Salad

  • First, cut the pineapple top, bottom and sides off. Turn pineapple on its' side and cut into circular pieces, about 1 1/2 inches thick. Using desired cookie cutter shape, cut pineapple into shape. Then, chop remaining pieces of pineapple into bite-sized pieces.
  • Next, cut the sides off the cantaloupe. Again, cut into 1 1/2 thick, long pieces and use cookie cutters into desired shape. Chop remaining pieces into bite-sized pieces.
  • Cut mangoes and do the same with the cookie cutters, chopping remaining pieces into bite sized pieces.
  • Chop strawberries into bite sized pieces.
  • Combine all bite sized pieces together and set aside cookie cutter pieces.
  • Layer bite sized pieces in personal bowls then top with a dollop of fresh whipped cream. Assemble cookie cutter pieces on top of whipped cream and enjoy!

Whipped Cream

  • Freeze mixer bowl and whisk for 10 minutes.
  • Pour heavy whipping cream, vanilla and sugar in mixing bowl.
  • Mix on level 6 for 4-5 minutes until soft peaks form. You'll know it's ready when you can remove the whisk, hold it upside down and it stays put.
