Chopped Greek Salad

A simple chopped and healthy Greek Salad that can be used as the main dish with some grilled chicken or salmon. Alternatively, use it as a side dish for a group dinner.

Ingredients

  • 1 to mato diced
  • 1 cucumber diced
  • 1 green bell pepper diced
  • 1/2 cup olives diced
  • 1/2 a red onion diced
  • 1 Tablespoon chopped fresh Italian parsley
  • 3 Tablespoons extra-virgin olive oil
  • 1 Tablespoon vinegar apple cider or red wine or fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 cup crumbled feta cheese or to taste

Instructions

  • Dice all veggies and herbs.
  • Combine all ingredients, except feta cheese.
  • Chill until ready to serve, then add feta. Add salt and pepper, if needed.
  • Serve with grilled chicken, salmon or on its own.
