Ingredients
1 tomatodiced
1cucumberdiced
1green bell pepperdiced
1/2cupolivesdiced
1/2a red oniondiced
1Tablespoonchopped fresh Italian parsley
3Tablespoonsextra-virgin olive oil
1Tablespoonvinegarapple cider or red wine or fresh lemon juice
1teaspoondried oregano
1/2cupcrumbled feta cheeseor to taste
Instructions
Dice all veggies and herbs.
Combine all ingredients, except feta cheese.
Chill until ready to serve, then add feta. Add salt and pepper, if needed.
