Dice butter and chill in freezer. Preheat oven to 400 degrees F. Sift flour, baking powder and salt into large bowl and mix well. Add diced butter and mix with hands until there are pebble sized balls of butter. Add shredded cheese and thyme then whisk together until mixed well and evenly distributed. Add buttermilk and use a fork to mix until ingredients are combined to a sticky dough. Careful not to overmix. Drop 1/4 cup sized balls of dough on a greased baking sheet. Bake for 15-20 minutes on top shelf of oven until the edges are brown. Pull out of the oven and top with additional shredded cheese or just dig in and enjoy!
