Jalapeno Pineapple Burger

The most wonderfully tasty burger with a homemade jalapeño bun, roasted pineapple and caramelized onions. This burger is perfect for grilling season, spicy and sweet and delicious!

Ingredients

Jalapeno Buns

  • 3 tablespoons warm milk
  • 2 teaspoons active dry yeast
  • 2 ½ tablespoons sugar
  • 2 large eggs
  • 3 cups bread flour
  • cup all-purpose flour plus more for dusting
  • 1 ½ teaspoons salt
  • 2 ½ tablespoons unsalted butter softened
  • 4 jalapeños chopped with seeds removed

Roasted Pineapple

  • 1 whole pineapple sliced
  • 1/4 cup melted butter
  • 1/4 cup brown sugar
  • 1 Tablespoon harissa seasoning

Caramelized Onions

  • 3 medium sweet onions sliced
  • 2 Tablespoons butter
  • 2 Tablespoons canola oil

Burgers

  • 1 1/2 lbs of ground beef
  • 2-4 pieces of Havarti cheese
  • 4 pieces of green leaf lettuce
  • favorite burger seasoning
  • mayo if desired

Instructions

Jalapeno Buns

  • In a glass measuring cup, combine 1 cup warm water, the milk, yeast and sugar. Let stand until foamy, about 5 minutes. Meanwhile, beat 1 egg.
  • In a large bowl, whisk flours with salt. Add butter and rub into flour between your fingers, making crumbs. Using a dough scraper, stir in yeast mixture and beaten egg until a dough forms.Add chopped jalapeños to dough and gently mix to combine. Scrape dough onto clean, unfloured counter and knead, scooping dough up, slapping it on counter and turning it, until smooth and elastic, 8 to 10 minutes.
  • Shape dough into a ball and return it to bowl. Cover bowl with plastic wrap and let rise in a warm place until doubled in bulk, 1 to 2 hours.
  • Line a baking sheet with parchment paper. Using dough scraper, divide dough into 8 equal parts. Gently roll each into a ball and arrange 2 to 3 inches apart on baking sheet. Cover loosely with a clean kitchen towel and let buns rise in a warm place for 1 to 2 hours.
  • Set a large shallow pan of water on oven floor. Preheat oven to 400 degrees with rack in center. Beat remaining egg with 1 tablespoon water and brush some on top of buns. Bake, turning sheet halfway through baking, until tops are golden brown, about 15 minutes. Transfer to a rack to cool completely.

Roasted Pineapple

  • Preheat oven to 425 degrees F.
  • Mix butter, brown sugar and harissa in medium bowl.
  • Add sliced pineapple to bowl and mix until fully combined.
  • Add pineapple to a sil-pat or parchment paper lined sheet pan an drizzle remaining butter-harissa mixture over pineapple.
  • Roast in oven for 25-30 minutes until browned, flipping about halfway through.
  • Remove from oven and set aside.

Caramelized Onions

  • Add butter and oil to pan and melt slightly.
  • Add onions and cook down, stirring every few minutes over medium heat for about 30-45 minutes until desired doneness.
  • Remove from pan and set aside.

Burgers

  • Grill or cook burgers using desired method, inside in cast iron or on the grill outside. Cook until internal temperature reaches 145 degrees F or desired doneness.
  • Add cheese to burger while still in pan/on grill until it melts.
  • Add mayo to jalapeño buns and then layer lettuce, burger, onions, pineapple and top bun.
