Incredible Irish Corned Beef Dumplings

These homemade corned beef dumplings are a delicious way to utilize leftover corned beef. You can make them as dumplings or as "spring rolls." Serve with BBQ sauce while enjoying!

Ingredients

  • 12 dumpling wrappers
  • 8 spring roll wrappers
  • 4 slices white cheddar cheese
  • 1 cup corned beef thinly sliced
  • 1/2 cup green onions chopped
  • BBQ sauce for dipping

Instructions

  • The ingredient amounts above are for 12 dumplings OR 8 spring rolls. If you want to make BOTH, you will need to double the amount of cheese and corned beef.
  • First, you need to slice or rip your cheese into small pieces. Then, you need to slice your corned beef into thin slices so they fit into your dumpling or spring roll wrapper.
  • Then, you need to close the dumpling or wrap your spring roll. I recommend googling how to wrap these so you make sure they are rolled tight and closed correctly. Do NOT overfill them. Trust me, less is more here.
  • Once they are filled and closed, you want to cook them. The dumplings and the spring rolls are cooked differently.
  • For the dumplings, get a medium sized pan and bring it to medium heat with a little bit of oil in it. Then, pan fry the filled dumplings for a few minutes on each side until browned and slightly crispy.
  • For the spring rolls, brush them with a little bit of oil on the outside. Then, place in an air fryer for about 5-7 minutes until browned and slightly crispy.
  • Serve both with green onions and BBQ sauce for dipping!
