Secret for the Best Steak, Garlic Scape Compound Butter

I love a good homemade steak. Probably because I married a butcher and he makes the BEST ones. I’m a firm believer that the best steak dinner is one of little frills that let’s the protein do the talking. Honestly, if you use steak sauce regularly, I’m not sure if we can be friends. A good steak shouldn’t need it!

That being said, I highly suggest butter and maybe more butter to up the flavor of steak! I won’t go into the cookings strategies today for steak but instead I’m sharing an amazing recipe for compound butter that will change your life. 

We found these garlic scapes at the Ann Arbor Farmers Market and literally saved them throughout our entire trip in Traverse City Michigan so we could enjoy them at home in Columbus. Ridiculous, or genius? 

Have you ever had a garlic scape? I’ve only seen them at Farmer’s Markets and usually very randomly. “Garlic scapes are the stalks that grow from the bulbs of hardneck garlic plants.” They are super easy to use, think of them a different version of green onions that taste more garlicky than oniony. Bon Appetit has some awesome ways to use them in this article just in case you have some leftover from this compound butter recipe. 

Okay so this actual recipe is SO easy. It’s literally three ingredients but I swear helps to make even the best steak taste even better. All you do is whip butter with a handheld or stand mixer and then add pulverized garlic scapes + olive oil. Then, you make sure it’s nice and uniformly mixed and form it into a brick on some parchment paper. Toss it in the fridge for at least 2 hours and then scoop onto your cooked steak. 

Voila, the yummiest steak you’ll ever have. 

As far as what cut of beef is best for steak, I think that’s total personal preference. We typically buy flank, tri-tip, or skirt steak because they are usually cheaper and just as quality when cooked properly. But, honestly I’m never going to turn down a ribeye because they are delicious. Since we live in an apartment, we never use a grill and usually sous vide our steak and then sear in a cast iron pan or use a culinary torch.

Garlic Scape Compound Butter

This super easy, three ingredient compound butter is the perfect addition to whipping up steak at home!

Total Time: 32 minutes minutes
Servings: 1 pound

Ingredients

  • 4 sticks butter 1 pound, softened
  • 3 Tablespoons olive oil
  • 1 cup fresh garlic scapes

Instructions

  • Using a hand or stand mixer, whip softened butter until fluffy, about 1-2 minutes. 
  • Add chopped garlic scapes and olive oil to a food processor and mix very minced. 
  • Add garlic scape mixture to whipped butter and mix until fully combined and evenly distributed. 
  • Scrape butter onto parchment paper and form into block. Completely cover/wrap the butter with the parchment paper and place in fridge for at least 2 hours before using. 
  • Add a dollop to a warm steak, let melt and enjoy!

    Found this recipe randomly while searching for garlic scape recipes, then noticed you got these from Ann Arbor! We just moved into a house in AA and have SO MANY wild garlic scapes in our yard!! Might have to open up a farmers market stand lol!
