Easy breakfast for weekend mornings.

Not sure about you, but weekend mornings are way less busy than weekday mornings! Make me re-read this if O ever plays youth sports and I’m up at 6am schlepping her off to soccer in the rain. Parenting is fun, y’all.

No matter the time of year, you’ll enjoy these puff pastry cinnamon rolls. But, there is something about enjoying them when there is a sprinkle of snow outdoors that makes me oh so excited for the holiday season. Grab a cup of coffee, turn on the Hallmark channel and dang, that’s a cozy morning.

Plus, we added a secret ingredient that screams Christmas! We used a little bit of ground cloves from Spice Islands that will really make you want to sing “Santa Baby” all morning.

An easy homemade cinnamon roll recipe.

I won’t lie, I tend to buy homemade cinnamon rolls from a local bakery (because they are the best) or I buy canned ones. Don’t even start with me, you know you love those too.

But, the main reason I don’t make them is because they usually take FOREVER because they are made with yeast. I’ve even tried to find overnight slow cooker cinnamon rolls and I can never find a good recipe that can be made AND enjoyed in the morning.

So, I made our own quick cinnamon roll recipe! These will take you about 50-60 minutes from start to finish but 45 minutes of that is cooking time. Easy. Peasy.

Tips for puff pastry cinnamon rolls.

These semi-homemade cinnamon rolls are made possible through some delicious store-bought puff pastry dough. I mean, you could make homemade puff pastry if you are feeling really adventurous.

But, I choose to grab some from the dairy section at my local grocery stores. You do need to pay attention to which one you buy though because some take a while to thaw out. We used the Wewalka brand and you can use it straight from the fridge.

Prep Time: 15 minutes minutes
Cook Time: 30 minutes minutes

Ingredients

Cinnamon Rolls

  • 2 packages puff pastry thawed and rolled out flat
  • 1 cup brown sugar
  • 4 teaspoon ground cinnamon
  • 1/2-1 teaspoon ground cloves
  • 5-7 Tablespoons butter melted

Cream Cheese Icing

  • 4 Tablespoons butter softened
  • 4 oz cream cheese softened
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 1/4 cup whole milk
  • 1 – 1 1/2 cups powdered sugar

Instructions

Cinnamon Rolls

  • Preheat oven to 425 degrees F (or whatever temperature your puff pastry suggests).
  • Place both thawed puff pastry flat on the counter or on a baking sheet to control the mess.
  • Whisk brown sugar, ground cinnamon, and ground cloves in a small bowl and whisk til combined. Set aside.
  • Brush one of the thawed puff pastry with the melted butter. Sprinkle half the brown sugar mixture evenly across the puff pastry. Then, tightly roll and place the "seam" side down. Slide into 5 even pieces, about 2 inches. Leave on counter while you prepare the baking dish.
  • Brush a cake or pie pan with some of the melted butter then sprinkle a bit of the brown sugar mixture on top. Place the five cinnamon rolls around the edge of the pan.
  • Repeat the above with the other puff pastry. Sprinkle any remaining brown sugar mixture on top, if desired.
  • Bake in the oven for 25-30 minutes, until cooked through and a little brown on top.
  • Let cool a bit then top with cream cheese icing and enjoy!

Cream Cheese Icing

  • Place all ingredients in a large bowl or stand mixer. Using a hand mixer (or stand mixer) whisk until fully combined with no lumps.
