Perfect Potato Salad for #CookoutWeek!

 There are two things I love about summer. One, my birthday on June 30th. Sup, fellow cancers. Two, making all the yummy cookout foods! It’s #CookoutWeek and we’ve teamed up with about 50 other bloggers to make some delicious recipes for you all to enjoy all summer long. 

First on our list is the most perfect potato salad, adapted from the famous Hellman’s recipe. 


I literally HATE peeling potatoes and usually The Beard does this for me but he wasn’t home when I whipped up this recipe. But, I will say that no fancy peeler is needed, just use a plain veggie peeler like this one here. I gave in this time and peeled the potatoes because skin in this recipe would be weird. 

I just have to say that easy potato salad is probably one of my favorite side dishes because it incorporates three of my favorite ingredients. Potatoes, eggs, and mayo is a total recipe for success. See what I did there, I’m so funny. JK. 

Since both the eggs and the potatoes have to boil, you can make one of the other first or just have two boiling pots going on the stove. I like to shorten my cooking time so I usually multi-task while cooking but do whatever will make you the most comfortable in the kitchen! 

P.S. – I steamed these eggs and I’m NEVER going back to boiling in water. They were seriously perfect and peeled SO easily. Game changer, guys. We have this steamer basket and it works wonderfully.

I love a good creative and twist on the classics recipe, but for this one I made a fairly traditional potato salad. I just feel like sometimes you don’t have to mess with the classics! You could totally toss in some additional ingredients like celery, bacon, green onions, jalapenos, etc. I might actually have to make a bacon jalapeno potato salad because OMG that sounds amazing. 

Also, I’m obsessed with this bowl that my wonderful friend Mellon bought us for our wedding. It’s huge but shallow so it’s PERFECT for family style side dishes. I don’t use it often but I was serving our potato salad at a cookout with my family so I busted it out. I can’t find the exact one she got us, but you can check out these options here, here, and here. 


Okay, so Baby O might be more interested in hot dogs than my delicious potato salad but whatever. My two little sisters ate it and that’s a success in my book! If you take this to a cookout, just be sure to not leave it in the sun too long because it is mayo based and that can get gross real fast.

Perfect Potato Salad

A twist on the classic Hellman's potato salad - perfect for all your summer cookouts!

Ingredients
  1. 2 lbs potatoes, peeled and cut into large chunks
  2. 1 cup mayo (preferably Hellman's)
  3. 2 Tablespoons white vinegar
  4. 1 1/2 teaspoon salt
  5. 1 Tablespoon sugar
  6. 1/2 teaspoon black pepper
  7. 1 small white onion, diced
  8. 3 hard boiled eggs, peeled and chopped
Instructions
  1. Prepare hard boiled eggs by steaming eggs.
  2. Add 1 inch of water to a large pot. Place steamer insert inside, cover, and bring to a boil over high heat.
  3. Add eggs to steamer basket, cover, and continue cooking, about 11 minutes.
  4. Remove and run under cold water then peel, chop and set aside.
  5. Cover diced and peeled potatoes with water in a large pot and bring to a boil.
  6. Reduce heat to low and simmer until potatoes are a bit soft, about 10 minutes.
  7. Drain and let cool.
  8. In a large bowl, combine mayo, vinegar, salt, sugar, and pepper until combined.
  9. Add potatoes, eggs, and diced onion and gently combine.
  10. Serve chilled or at room temperature and enjoy!
Notes
  1. Careful not to let the potato salad sit out too long at your cookout because it is mayo based!
