Leftover Turkey Naan Flatbreads

As we’ve already discussed in our recipe for leftover turkey + cheddar crescent rolls, I love Thanksgiving leftovers. I want to think it’s because I love this holiday because of all the time we spend with family and leftovers mean I get to keep all those warm memories with me. But, in reality, I think it’s because it gives me more opportunity to make yummy meals. Sorry family. Leftover turkey being sliced.This reminds me of the Friends episode where someone eats Ross’ sandwich. “You ate my sandwich? MY SANDWICH?” I’m hoping someone gets my reference here because I love that show. While this recipe is for leftover flatbreads not a sandwich, it does still incorporate some delicious items from your Thanksgiving feast. crispy kale being fried.If God forbid, you don’t use all the cheese on your cheese plate, you’ll have the perfect use for them the next day! We used mozzarella, cheddar, and brie on our three variations of leftover flatbreads. But, you could totally use bleu cheese, swiss, or even just parm on top of yours!

If you want to make this really leftover-ish, use gravy or cranberry sauce as your base! We used buffalo sauce, bbq sauce, and plain ol’ olive oil. sauces for turkey naan flatbreads.Then, load up your toppings! Obviously, layer with your sliced leftover turkey and make sure to slice extra because you’ll eat half of it while you are preparing your flatbreads. If you are heading out to shop on Black Friday with the family, this is the perfect easy lunch for you to have when you get back! Just make sure to make a stop at Costco to get the jumbo pack of the Stonefire Naan Flatbreads. I love making recipes like this because there are so many options to make sure everyone gets a version they like. We whipped up a BBQ turkey that is a little more on the smokey side. Then, we made a buffalo turkey topped with green onions that adds a tiny bit of heat to the mix. My favorite was a “healthier” flatbread with crispy kale, pears, and lemon zest with brie. Ingredients
  1. 6 Stonefire Naan Flatbreads
  2. 18-20 pieces of leftover turkey
  3. 3-4 Tablespoons buffalo sauce
  4. 3-4 Tablespoons BBQ sauce
  5. 1 Tablespoon olive oil
  6. 8-10 pieces leftover brie
  7. 3/4 cup shredded cheddar
  8. 3/4 cup shredded mozzarella
  9. 1 pear, sliced
  10. 1 bunch kale, sautéed until crispy
  11. lemon zest
  12. green onions, for topping
Instructions
  1. Preheat oven to 400 degrees F.
  2. Lay flatbreads on baking sheet. Spoon buffalo sauce, BBQ sauce, and olive oil on their respect flatbreads.
  3. Top each flatbread with sliced turkey.
  4. Layer each flatbread with cheese and then additional toppings.
  5. Bake in oven for 8-10 minutes until cheese is melted and flatbread is slightly crispy.
  6. Enjoy with other yummy leftovers from Thanksgiving!
Notes
  1. You can multiple the servings by 2, 3, 4, or however many guests you have! You can totally substitute other cheeses, toppings, etc. to make your own leftover flatbread.
