Homemade Loaded Queso Recipe | A Delicious Vegetarian Option

Homemade loaded veggie queso is the best! This recipe is super easy to make and is best served with salty tortilla chips.

Loaded queso is everything.

I feel like queso is a way of life. Every part of the country has their “version” that is the best, especially in those southern states. I mean, I’ve had some pretty darn delicious versions across the country.

But, this homemade queso made with MorningStar Farms® Chorizo Crumbles is everything. As someone who doesn’t eat pork on a regular basis, I’m always bummed because “loaded” usually means bacon or sausage. Not this time!

MorningStar Farms® has launched a new line of products in the frozen food section at Walmart, including the Chorizo Crumbles. They are great because they are veggie friendly but not just for folks who only eat that way. I’m a meat-eater and happily gobbled these up – they are definitely for everyone at your fall football tailgate.

Loaded homemade queso add-in’s.

You can definitely add whatever types of add-in’s you’d like to make your queso recipe, loaded, but we have some solid recommendations.

First, is of course the MorningStar Farms® Chorizo Crumbles and let me tell you why.

  • The chorizo crumbles are 100% vegan and an awesome source of protein (9g per serving!), cholesterol free, and are made with Non-GMO soy.
  • Incredibly easy to prepare. Just toss in the skillet for less than 10 minutes and it’s done. Plus, there isn’t splattering of grease everyone which makes for simple clean-up.
  • Because they come in a resealable bag, you can actually half this recipe and use the remaining chorizo crumbles for another recipe like a frittata, or tacos.

Best way to serve this queso recipe.

We made this recipe in a cast iron skillet because it keeps the heat and is a super sturdy cooking tool. If you are serving immediately, you can definitely keep it in here so folks can either eat straight from it or drizzle on their tortilla chips like nachos.

The other option is to put this finished queso recipe in a crock pot. You can easily pour the finished orange queso into the crock pot size of your choice and turn to low, then add the additional tomoatoes, jalapenos, and remaining chorizo crumbles to make it loaded.

If you are hosting a fall gathering, like a football tailgate party, I definitely recommend the crock pot option so folks can get their queso fix throughout the whole game. If it lasts that long.

Loaded Queso

This veggie friendly loaded queso is made with Morningstar Farms® chorizo! It's perfect for a tailgate or just a Taco Tuesday.

Ingredients

  • 1 bag Morningstar Farms® Chorizo Crumbles
  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • 2 cups whole milk room temperature
  • 1 15oz can diced tomatoes
  • 3 cloves garlic minced
  • 2 jalapenos diced
  • 6 cups cheddar cheese shredded

Instructions

  • Prepare your Morningstar Farms® Chorizo Crumbles, according to package instructions. Once cooked, leave in the warm skillet and set aside until ready to add to queso.
  • Prepare all your ingredients before you even turn on your oven. Place everything in little bowls or cups nearby so you can easily add the next ingredient without having to pause your queso cooking.
  • Place a cast iron skillet on your stove over medium heat and add butter. Melt butter then add the flour and whisk continuously for 1 minute until totally combined and starting to bubble a little bit.
  • Gently pour in your room temperature milk, whisking the whole time. Continue to whisk for another 3-4 minutes, trying to whisk out any of the clumps of flour. Your mixture will magically come together at about 3 minutes and 30 seconds and possibly start to bubble. Careful not to let it overflow and turn down the heat, if necessary.
  • Then, add in the garlic, jalapenos, and tomatoes. Whisk to combine. Add in 1 1/2 cups of the cooked Morningstar Farms® Chorizo Crumbles. Whisk to combine.
  • Add in half of the shredded cheese, whisk to melt and combine. Once it's smooth, add in the remaining shredded cheese and whisk to melt and combine.
  • Remove cast iron skillet from stove. If serving straight from skillet, add additional jalapenos, tomatoes, and Morningstar Farms® Chorizo Crumbles to center of queso. If serving for an extended period of time, pour into a Crock Pot then top with jalapenos, tomatoes, and Morningstar Farms® Chorizo Crumbles.
  • Serve with tortilla chips and enjoy!

      Hi Timothy! Great question. Unfortunately, I didn’t track the nutritional info for this recipe but I can tell you that the Morningstar Chorizo Crumbles do have 420 mg of sodium per serving. The cheese I used is about 180mg of sodium per serving. It would depend on which brands of the other ingredients you used. Thanks!
