Easy Southwestern Salad Recipe With Fish Sticks

Cod Fish Stick Southwestern Salad|Homemade Avocado Crema

This fish stick salad might be one of my most favorite recipes. I’m all about living that semi-homemade life now that my child needs ALL the attention in the world. Seriously, I never knew that three year olds were equally demanding and independent. Geesh.

With this southwestern salad recipe, I can feel good about still prepping some of the items like chopping romaine and blending the homemade avocado crema. But, I can feel even better about tossing these tasty Cod Fish Sticks into my air fryer to make my life easier.

Honestly, semi-homemade food is a necessity during busy life seasons.

We’ve worked with Gorton’s Seafood on a few recipes this year and each time, I get more and more excited about the possibilities with their products. Not only are they delicious (and toddler approved), I feel great about their sustainability practices (read those here).

Okay, but also did you think I was crazy for adding fish sticks to a salad? I have a recipe for chicken strips on a salad and was like “hey, if chicken can do it, why not fish?!” It helps that these Cod Fish Sticks are SO crunchy and pair perfectly with romaine lettuce.

  • They are breaded in crunchy panko and cut from whole, wild-caught Cod fillets.
  • These Cod Fish Sticks are part of the “Everyday Gourmet” line at Gorton’s Seafood which are “chef-inspired.”
  • Gorton’s Seafood was founded in Gloucester, MA in 1849! Gloucester is America’s oldest seaport and the birthplace of the US fishing industry.

Southwestern Salad with Cod Fish Sticks and Avocado Crema

This quick salad is full of flavor from the perfectly smooth avocado crema to the crunch of the delicious Cod Fish Sticks. It will definitely become a family favorite!

Ingredients

Southwestern Salad

  • 12 Gorton's Seafood Cod Fish Sticks
  • 4-6 cups romaine lettuce chopped
  • 1 cup corn
  • 1 cup black beans drained, rinsed, and dried
  • 2 jalapenos seeds removed and sliced
  • 1/2 cup red onion sliced

Avocado Crema

  • 2 avocados deseeded and scooped
  • 1 cup fresh cilantro chopped
  • 1 cup sour cream
  • 1/4 cup whole milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • zest and juice of two limes

Instructions

Southwest Salad

  • Prepare Gorton's Seafood Cod Fish Sticks using preferred method. We recommend using your air fryer but they are delicious any way!
  • Once your Gorton's Seafood Cod Fish Sticks are almost done, combine your romaine lettuce, black beans, corn, red onions in a large salad bowl.
  • Place Gorton's Seafood Cod Fish Sticks on top of your salad then drizzle your avocado crema on top. Distribute evenly amongst your family and enjoy!

Avocado Crema

  • Add all ingredients to a food processor or blender. Pulse until completely combined. If you'd like it to be a little thinner, you can add more milk but careful not to make it too thin – it should be creamy.

Notes

To get that pretty drizzle of crema, pour into a plastic baggie and cut the tip off to pipe over your salad.
