Bourbon, Root Beer & Peach Ice Cream Float

Sigh. Peach season is almost over. We had to find a way to get our peach fix before they leave our local stores! What better way than to brulee them up to top a bourbon, root beer, and peach ice cream float? Yum! 

We just bought a culinary torch (finally) and this is the perfect use for it. You just toss a layer of granulated sugar on top of the peach slices and use the torch to get them nice and toasty. You can also do this under your broiler if you don’t have a culinary torch, just be sure to watch them so they don’t burn! 

We enlisted the help of a favorite local ice cream company, Velvet Ice Cream, to make this ice cream float even more delicious. During the summer, they have a Summertime Peach flavor that is perfect and oh so yummy. 

Alternate flavors for ice cream floats with Velvet ice cream include Campfire S’mores, Elephant Ear, Fresh Strawberry, and Olde Tyme Vanilla! 

Just a side note that we have to get a new refrigerator because the coils are broken (??) so our ice cream wasn’t totally frozen. Usually their products are perfection so just note that this is user error because of our darn fridge so the ice cream looks a bit soft.  

I love how easy this ice cream float recipe is! Now, all you have to do is pour in some of your favorite root beer. My friend Erin over at The Spiffy Cookie loveees root beer so if you are looking for some great suggestions, go take a gander at her website here. 

We used Barq’s Root Beer for this recipe because it’s super delicious but you can absolutely swap out for another option! 

Okay, so actually the most important part of this recipe is the bourbon! Make sure you use a metal jigger to measure your bourbon or it might get a little too boozy. We picked up a bottle of Traverse City Whiskey Co. bourbon when we were up in Michigan last month. I love buying foodie gifts when we are traveling, they make awesome presents for friends back home too! 

Last but not least, add another scoop of that delicious Peach Velvet Ice Cream on top of your ice cream float for extra goodness. 

Serve with your bruleed peach slice and there you have a decadent, super easy and delicious bourbon, root beer, and peach ice cream float! What different flavors would you try? Let us know in the comments and tag us on social! 

Bourbon, Root Beer & Peach Ice Cream Float

This delicious ice cream float can be swapped for other ice cream or sodas but this combination is oh so perfect!

Ingredients

  • 3 scoops Peach Velvet Ice Cream
  • 1 1/2 ounces Bourbon
  • 8 ounces Root Beer
  • 1 peach

Instructions

  • Prepare brulee peach by slicing a few pieces off the peach, set in a cast iron skillet then sprinkle with sugar. Using a culinary torch, caramelize the sugar on top of the peach until desired toastiness. Set aside. 
  • Add scoops of ice cream to chilled glass. Top with bourbon then root beer. Finish on with another scoop of ice cream! 
  • Serve with bruleed peach and enjoy!

    Oh my freaking hot damn. How has it never occurred to me to combine peaches and root beer or even bourbon and root beer? You are killing me with this float. Also huge thanks for the shout out, friend!
