We are entering the world of school this year with our little one entering preschool! It’s such an exciting time in our household but there is one lingering question. What is this kid going to eat after a morning of heavy play?

We created three easy after school recipes that are going to be on repeat in our household!

The first delicious and simple recipe is for turkey and cheese pinwheels. These pinwheels take about 5 minutes to make and are a fun way for kiddos to get a little bit of protein and a little bit of dairy into their diets. There are a few tips to make sure your pinwheels are extra perfect though.

  • Use soft tortillas at room temperature. Cold tortillas will rip when you roll them.
  • Don’t overstuff the tortilla and only put the toppings in the middle of it. It won’t roll if it’s overloaded.
  • Roll VERY tightly from edge to edge and then use a toothpick to secure it while you slice them into pieces.

The great thing about these turkey and cheese pinwheels is you can easily swap the ingredients for something different every week! You can try out different tortillas, various deli meats, cheeses and even test different veggies or flavored cream cheeses inside.

The next after school snack could also be a before school snack! Since experts recommend three servings of low fat or fat free dairy per day, you could serve these for breakfast and the pinwheels for after school.

I made these yogurt parfaits even more amazing by using Greek yogurt! Six ounces of Greek yogurt typically contains 14-17 grams of protein.

The awesome thing about these yogurt parfaits is you can also switch up the ingredients depending on what’s on sale, in season, or just in your fridge. I used strawberries and bananas as the fruit because those are my favorites.

When you choose your granola, just be careful to watch the sugar because that can sneak in there! If you want to control that a little bit, here is a great homemade granola recipe from What Molly Made.

Also, pro tip while making these simple parfaits – use a cookie scoop to layer the yogurt. It’s SO much easier than a spoon.

Last but not least (and my personal favorite) – FRUIT PIZZAS! These are essentially quick sugar cookies topped with a sweet cream cheese spread and your favorite fruits. It’s such a great way to get some delicious dairy and fruit into your diet in a simple and tasty way.

These are a great after school treat that your kiddo can help make! Let them pick their own fruits to put on top and they’ll be so excited to taste them.

Prep Time: 10 minutes minutes
Servings: 10 pinwheels

Ingredients

  • 2 soft tortillas room temperature
  • 2-3 Tablespoons cream cheese softened
  • 2 pieces sliced deli turkey
  • 2-4 pieces sliced deli cheese
  • 2 pieces romaine lettuce

Instructions

  • Smear cream cheese over each tortilla from edge to edge in a uniform layer.
  • In the middle of each tortilla, add one piece of lettuce, one piece of turkey, and 1-2 pieces of cheese (depending on size). Leave about an inch or so from the top of the tortilla so you don't over fill it.
  • Roll your filled tortilla very tightly, stopping to pull the ingredients tighter, until completely rolled. Secure a toothpick to the filled, rolled tortilla to hold in place while you slice.
  • Cut off edges where there is no filling and discard (or eat). Hold tightly and sliced into 5-6 thick pieces.
  • Enjoy!
