This post and recipe was created for #SummerDessertWeek! I was sent samples by some of the sponsor companies but as always opinions are 100% mine. I used pineapple sprinkles and yellow dot cupcake liners from Sweets & Treats for this recipe.

I love making cupcakes. They aren’t my favorite dessert to eat but I LOVE making them and decorating them. Especially when I get to use adorable liners and sprinkles like these yellow & pineapple ones from Sweets & Treats.

These pina colada cupcakes are part of #SummerDessertWeek!

It’s so fun teaming up with fellow bloggers to bring you tons of new recipes at once. We shared three new recipes this week (including these fluffy cupcakes) and you can grab those recipes right here and here. But, scroll all the way down and you’ll see a TON of different recipes from our friends anddd an amazing giveaway.

I used sweetened coconut in the cupcakes and sprinkled some more on top for extra delicious flavor. If you want to get real crazy, you can also add coconut extract but I felt like that was a little much. Plus, I didn’t have any handy.

The adorable pineapple sprinkles aren’t flavored like pineapple but you’ll get plenty of pineapple flavor from the juice in the frosting! If you want more pineapple flavor, you can add additional juice to the frosting. You could also pipe some crushed pineapple INTO the coconut cupcake just like we did in this cupcake recipe.

You’ll need some of the following ingredients and tools to make these perfect pina colada cupcakes!

  • Pineapple Sprinkles
  • Yellow Dot Cupcake Liners
  • Rodelle Vanilla Extract
  • Stand Mixer

I agree with you – I really enjoy making cupcakes but I don’t love eating them.
These are so cute – totally makes me want to throw a summer party so that I have an excuse to make them.
