The Easiest Fresh Pineapple Salsa Recipe

It’s officially spring time and the weather is basically forcing us to be outside! I don’t hate it. Whether you are grilling dinner for the whole family or just having a quick snack outside, this pineapple salsa will be a crowd pleaser. If you need some pointers on how to cut a whole pineapple, check out this YouTube video (where I learn everything) from Clean & Delicious. 

The most important part of this salsa is to make sure you chop everything into fairly even sizes. You don’t want a giant hunk of tomato and then a super small piece of pineapple. The best way to do this is use a large and sharp chef’s knife to chop all the salsa ingredients! Just a reminder to make sure you are always keeping your knifes sharp because you are way more likely to cut yourself on a dull knife than a sharp one. 

Then you add all the ingredients into a big bowl and mix ’em all together. It’s a pretty simple recipe but super delicious. If you want to make it a little spicier, you could use habanero or Serrano peppers or you could just leave the seeds in from the jalapeños. I personally like it to stay a little sweeter because of the pineapple but you can make it totally customized! 

There are multiple ways you can enjoy this pineapple salsa. You could toss it in a bowl and grab some tortilla chips and go to town, which might be my preferred method because I’m a totally snacker. This recipe makes a super big batch so you would have pineapple salsa for a whole group, perfect for a party! 

Instead of just enjoying the pineapple salsa with chips, you could toss it on your favorite taco! We whipped up tacos using the spicy onions from Michael Symon’s new cookbook and then added this fresh pineapple salsa on top. It was so delicious with the grilled chicken too! Ingredients
  1. 1 cup fresh tomato, diced
  2. 1 cup fresh pineapple, diced
  3. 1 small white onion, diced
  4. 1 jalapeno, diced with seeds removed
  5. juice of one lime
  6. 1 teaspoon salt
Instructions
  1. Dice tomatoes, removing the "wet" part and using the "hard/dry" part for the salsa. Add to mixing bowl.
  2. Dice pineapple, onion, and jalapeño to fairly even sizes and add to mixing bowl with tomatoes.
  3. Add lime juice and stir to combine.
  4. Add salt and stir to combine.
  5. Enjoy with tortilla chips or on your favorite taco!
