Easy Party Chicken Skewers with Bellisari’s Spreads

Now that Thanksgiving is over, it’s officially time to start preparing for all your holiday parties! Our friends at Bellisari’s Spreads provided a few yummy items for us to make some easy party recipes. Their story is all about family and making simple convenient meals with a little bit of gourmet. That sounds vaguely familiar to us. While Bellisari’s has a wonderful lineup of spreads (and burger sauces!), we chose their balsamic, shallot, and black garlic spread for this recipe. You can’t really go wrong with any of them but this one had just the punch of flavor we need. Start by marinating your chicken thighs for at least an hour. You can even leave them overnight if you are really trying to prep for your party! Easy Holiday Recipes // The Beard and The Baker I know a lot of recipes call for chicken breast but we always use thighs in our household. They are typically cheaper and I think more flavorful because they still have a little bit of fat on them. We aren’t in the business of selling you waist thinning recipes, so a little extra fat (flavor) won’t hurt you. Plus, you’re making roasted tomatoes which are totally healthy. Easy Holiday Appetizers // The Beard and The BakerYes, we marinated them in the yummy spread, but we added another layer of flavor when we tossed them in our pan. Just use a simple pastry brush to dab on some additional sauce while the little chicken pieces are cooking. In that same vein, make sure when you chop up your chicken, you make them all fairly uniform in size. Now that your tomatoes and chicken are all finished, it’s time to eat them! Just kidding, it’s time to make all the skewers. Do you have kiddos in the house? This is the perfect task to utilize their help. Just make sure that your chicken and tomatoes are at room temperature. You don’t need burnt fingers or melted mozzarella. Just pop them on a little toothpick and you are good to go and voila, easy party recipe! The lovely thing about these appetizers (other than being delicious) is that they can sit at room temperature. That’s pretty important when you are making recipes for a party! You don’t want anything too perishable out for more than an hour or two. Easy Party Chicken Skewers

These little skewers are the perfect party appetizer for all ages. The Bellisari's spread takes them to the next level!

  1. 1/2 pound boneless, skinless chicken thighs
  2. 3-4 Tablespoons balsamic, shallot and black garlic Bellisari's spread
  3. 4 ounces fresh mozzarella, chopped into uniform pieces
  4. 1 pint cherry tomatoes
  5. canola oil
  6. salt and pepper
  1. Chop chicken into bite-size pieces. Place in glass bowl and combine with 2-3 Tablespoons balsamic, shallot, and black garlic Bellisari's spread. Let marinate in fridge for at least one hour.
  2. About 10 minutes before removing chicken from fridge, prepare tomatoes. Toss them on a baking sheet and cover lightly in canola oil and salt. Broil them on middle rack for about 3-5 minutes.
  3. Remove tomatoes and set aside to let cool to room temperature.
  4. Remove chicken from fridge and turn pan on to about medium heat. Place chicken in pan and cook for 2-3 minutes on each side, until internally temperature is at least 165 degrees F. Lightly brush with additional Bellisari's spread.
  5. As chicken finishes, set on cutting board with tomatoes and mozzarella. Once chicken is cooled to room temperature, assemble the skewers with the chicken in the middle.
  6. Serve room temperature at party alongside other yummy snacks and drinks!
